Spring detox recipe number 2! If you’re like me, you like the warmer weather and get inspired this time of year to cook healthier, fresh and delicious recipes. This avocado, chickpea & apple salad is SO easy to make and the maple balsamic dressing is to die for! Sooo darn tasty!
I have been working hard to bring you guys more spring detox recipes that are easy to make, SO delicious and make you feel your absolute best!
Heres what you will need:
- chickpeas
- ripe avocado
- apple
- spinach
- fresh basil
- maple syrup
- balsamic vinegar
- shallot
- dijon mustard
- olive oil
- sea salt
What to pair this salad with:
If you are vegan then you could easily have this salad as is (I definitely do) as it is so satisfying with the rich avocado, crisp apples and protein packed chickpeas. You can have this as a side dish to many different types of meat as well..
- serve with roasted lemon garlic salmon
- pair with grilled balsamic tofu/tempeh
- bring as a side dish to your next bbq or potluck (after were out of isolation, of course)
- serve with creamy vegan cauliflower pasta
- serve with bbq’d ribs or chicken
- make for you next work lunch/meal prep ahead of time keeping the dressing separate
This maple balsamic dressing is pretty darn tasty.
You can omit making the chickpea salad and skip right to this delicious salad dressing! You can use this dressing on many different types of salads, serve over roasted chicken or salmon, use asa dip for vegetables or serve over baked brie with your favourite crackers or bread. I like to make a little extra of this dressing to have on hand as a clean salad dressing when I’m in a pinch or want to add a more flavour to my roasted meat or veggies. COMMENT below! Avocado, Chickpea & Apple Salad with Maple Balsamic Dressing | Vegan
Ingredients
- AVOCADO CHICKPEA APPLE SALAD:
- 1 can of organic chickpeas (410ml/13.9oz)
- 1 ripe avocado
- 1 apple
- 6-8 cups of spinach
- 1/2 cup fresh basil
- -
- MAPLE BALSAMIC DRESSING:
- 1 medium sized shallot
- 1/4 cup maple syrup
- 1/4 cup + 1 tbsp balsamic vinegar
- 1 tbsp dijon mustard
- 1/4 tsp sea salt
- 1/3 cup olive oil
Directions
- Step 1 Start by making the dressing: add all of the ingredients to a food processor or blender BUT the olive oil. Pulse until these ingredients are well combined. Now begin to add the olive oil into the blender gradually to allow the dressing to emulsify (makes it creamy and dreamy). Once the dressing is completely smooth, set aside.
- Step 2 Grab a medium-large sized bowl and add in the spinach. Slice the avocado and apple into thin slivers. Open the can of chickpeas, rise and drain well. Now add all of these ingredients over the bed of spinach. Top with fresh basil last.
- Step 3 If you eating the salad later, leave the dressing in the fridge until you are ready to serve. ENJOY!
