Chocolate Almond Power Balls | Vegan + Paleo

I’M BACK BABY. I know, I know, it’s been quite some time since I did a blog post!! I’m feeling inspire and very happy to be back to creating in my kitchen.

If I’m being completely honest, 2021 was full of challenges for me (pandemic aside). These challenges left me feeling stressed, unmotivated and uninspired to create healthy recipes, even though it’s something that I love to do. I know I really needed this time to focus on my health and all the little wins that life brings us. I know I am not the only one who struggled this past year, to say the least, it as a doozy. I can feel myself becoming more inspired by the day, I can’t wait to create some amazing recipes for all you lovely folks!

Here we have Chocolate Almond Power Balls!! 

These bad boys are SO great as a quick snack or after dinner treat! They are gluten free, grain free & vegan!

Here’s what you will need:

  • soft medjool dates
  • almond butter
  • whole almonds
  • chia seeds
  • hemp hearts
  • cacao powder
  • sea salt
  • optional – chocolate chips

Thats it! Only 7 ingredients.

Chocolate Almond Power Balls

Ingredients
  • 12 soft medjool dates
  • 1/2 cup creamy almond butter
  • 1/4 cup raw cacao powder
  • 2 tbsp chia seeds
  • 2 tbsp hemp hearts
  • 1/2 cup whole almonds
  • 1/4 tsp sea salt
  • 1/4 cup chocolate chips *optional
Directions
  • Step 1 Start by removing the pits from the dates if needed. If the dates aren’t soft, pour boiling water over them and let them sit for 20-30 minutes until they have softened. Place the dates into a food processor and pulse until a paste has formed. Now add the almond butter and pulse.
  • Step 2 Add the cacao powder, chia seeds, and hemp hearts. Pulse until the ingredients are combined.
  • Step 3 Now add in the whole almonds, pulse until the almonds are at a desired size. I like mine to be pretty small pieces. Add the sea salt. Stir in the chocolate chips at the very end if you would like to add them.
  • Step 4 The consistency will be a bit crumbly at first. These will come together nicely once you roll them into balls. Use the palms of your hands to roll into 1 inch balls, placing on a lined baking tray. Once you have rolled out all of the power balls, place them in the fridge or freezer to set for at least 2 hours. Power balls will stay good in the fridge for up to 1 week, or 1 month in the freezer.
