This recipe is for all those granola lovers out there! This is hands down one of my favourite granola recipes. It has all of my favourite flavours all in one crunchy and flavourful granola. AKA coconut, almonds, vanilla and coconut. Possibly a match made in heaven?
What you will need:
- GF oats
- coconut oil
- maple syrup
- vanilla
- unsweetened coconut
- almonds
- cinnamon
- sea salt

Cinnamon Crunch Vegan Granola
Ingredients
- 8 cups GF oats
- 2 cups chopped/sliced almonds
- 2 cups unsweetened shredded coconut
- 3/4 cup coconut oil
- 1/2 cup maple syrup (use 3/4 cup if you like it a little sweeter)
- 3 tsp vanilla
- 1 1/2 tbsp cinnamon
- 1/2 tsp sea salt
Directions
- Step 1 In a large bowl. Mix the oats, shredded coconut, sliced almonds, cinnamon & sea salt together. Once this is mixed up, melt the coconut oil in the microwave until it is liquified. In a small bowl whisk the melted coconut oil, vanilla & maple syrup together.
- Step 2 Pour the wet ingredients over the oatmeal mixture. Mix this thoroughly until the oatmeal is well coated. Line a large baking sheet with parchment paper (if you don’t have a large baking sheet you can use 2 smaller baking dishes). Spread the granola out evenly onto the lined baking sheet. Bake at 325 for 20-25 minutes or until the oatmeal has reached a nice golden colour. Stir the granola every 5-10 minutes to prevent the bottom from burning. ENJOY!
