Anyone else have an abundance of zucchini around this time of year?? Well.. say HEY to these moist and fluffy orange zucchini muffins! These bad boys are SO flavourful, perfectly sweet and super easy to make. Made with clean, wholesome ingredients. These are gluten free, grain free, refined sugar free and dairy free! But trust me.. no one would know.
What you will need:
- eggs
- coconut oil
- vanilla
- 1 med-large orange
- zucchini
- erythritol or monk fruit (or granulated sweetener/sugar of choice)
- almond flour
- cassava flour
- backing soda + baking powder
Orange + Zucchini Paleo Muffins
Ingredients
- 2 eggs
- 1/2 cup coconut oil
- 1 tsp vanilla
- 1/4 cup fresh squeezed orange juice
- 2 tbsp orange zest (zest of 1 orange)
- 1 cup packed + grated zucchini
- 1/3 cup monk fruit sweetener (or granulated sugar of choice)
- 2 cups packed almond flour
- 1/3 cup cassava flour
- 1 tsp baking soda
- 1 tsp baking powder
Directions
- Step 1 Start by cracking the eggs into a medium – large sized bowl. Use a whisk to beat the eggs. Melt the coconut oil and combine thoroughly with the eggs. Now add the vanilla, orange juice and orange zest. Add the monk fruit (or sugar of your choice) to the wet ingredients and whisk until these ingredients are well combined. Now fold in the zucchini to the wet mixture.
- Step 2 Add in the almond flour, cassava flour, baking soda and baking powder to the wet mixture. Stir until a thick batter has formed.
- Step 3 Grease a muffin tin with coconut oil or use silicone muffin liners to keep them from sticking. Spoon in 1/4 cup of the muffin batter into each muffin tin (makes 12). Bake at 350 for 20-24 minutes or until a toothpick inserted into the middle comes out clean. ENJOY!!
