Since its peach season and all (arguably the best time of year), I thought I would make a delicious peach salad. If you are yet to try peach and bacon together, you are definitely missing out. The flavour and crunchiness from the bacon and walnuts pairs together so well with ripe peaches.
What you will need:
- ripe peaches
- arugula (or you choice of greens)
- thick sliced bacon
- walnuts
- fresh basil
- fresh lemon juice
- olive oil
- apple cider vinegar
- dijon mustard
- maple syrup or honey
- sea salt
Peach & Bacon Summer Salad with Peach + Basil Dressing
Ingredients
- SALAD:
- 6 cups arugula
- 2 ripe peaches
- 1/2 cup chopped walnuts
- 3-4 pieces thick cut bacon cooked

- BASIL PEACH DRESSING:
- 1/2 cup packed fresh basil
- 1 ripe peach
- 1/4 cup apple cider vinegar
- 1/4 cup lemon juice
- 1 tbsp maple syrup or honey
- 1/2 tbsp dijon mustard
- 1/2 tsp sea salt
- 1/2 cup high quality olive oil
Directions
- Step 1 For the salad dressing, combine all of the ingredients into a blender or food processor except the olive oil. Pulse the ingredients until they are well combined then gradually add in the olive oil while pulsing (this causes emulsification and makes the dressing super creamy). Set the dressing aside.
- Step 2 For the salad, utilize a medium-large sized bowl. Place the arugula on the bottom then add your sliced peaches. Top the peaches with chopped walnuts and cooked bacon pieces. Serve with the peach + basil dressing and ENJOY! The dressing makes about double of what you will use for the salad so you have a little extra.
