I find myself eating quite a bit of salmon during the summer months. I definitely get tired of the same old salmon dishes, so I like to change it up a little. If you know me, then you know my love for burgers. So why not make a delicious homemade salmon burger?
What you will need for the Salmon Burgers:
- fresh salmon
- eggs
- almond flour
- sriracha
- fresh parsley
- dijon mustard
- fresh cilantro
- garlic cloves
- sea salt + pep
For the Creamy Garlic Sauce:
- cashews
- olive oil
- garlic cloves

OK guys, this creamy garlic sauce is SO amazing. Seriously. I have been using it on burgers, nourish bowls, over roasted vegetables, as a dip for chips or veg. There is so much you could do with this sauce! It is dairy free, vegan + gf but is SO SO creamy. You definitely do not need to make these salmon burgers to enjoy the heck out of this creamy garlic sauce.

- CREAMY VEGAN GARLIC SAUCE:
- 1/2 cup raw cashews
- 1/3 cup good quality olive oil
- 4 cloves garlic
- juice of 1/2 a lemon
- 1/2 tbsp dijon mustard
- 1/2 tbsp maple syrup
- 1/2 tsp sea salt
- 1/4 tsp black pepper
Directions
- Step 1 Start by skinning and de-boning the salmon (if this isn’t already done). Chop the salmon into 1 inch cubes and place into the food processor. Roughly chop the garlic, cilantro and parsley and toss into the food processor. Add the remaining ingredients into the food processor and pulse until the salmon is a paste and everything is well mixed (try not to over mix if possible).
- Step 2 Grab a large baking sheet and grease it with oil, line with parchment or a silicone baking mat. Scoop out 1/3 cups of the salmon from the food processor and place onto the baking sheet. Flatten the salmon burgers slightly. Yields 10-12 burgers.
- Step 3 Bake the salmon burgers at 400 for 8-10 minutes. Beware that the salmon cooks very quickly so I would check the burgers right at the 8 minute mark.
- Step 4 While the salmon burgers are baking, gather the ingredients for the creamy garlic sauce. Throw all of the ingredients into a blender except the olive oil. Pulse until these ingredients are well combined, then add in the olive oil at the end. Pulse until this sauce is smooth and creamy.
- Step 5 Gather your supplies to make the burgers. Romaine or iceberg lettuce to wrap or your favourite buns. Get creative with the toppings! I love banana peppers and avocado in lettuce wrap style with the creamy garlic sauce. ENJOY!
