If you’re an apple cinnamon lover (who isn’t??), your going to love these muffins!! Made clean ingredients, these bad boys are gluten + grain free, refined sugar free and dairy free! Perfect for breakfast with some almond butter or as a quick snack.
What you will need:
- eggs
- vanilla
- apple cider vinegar
- coconut oil
- coconut sugar
- maple syrup
- granny smith apple
- baking powder
- almond flour
- nutmeg
- sea salt
- cinnamon
Paleo Apple Cinnamon Muffins
Ingredients
- 2 eggs
- 1/3 cup melted coconut oil
- 2 tbsp maple syrup
- 1 tbsp apple cider vinegar
- 1 tsp vanilla
- 1 granny smith apple grated
- 1/3 cup coconut sugar
- 2 1/2 cups packed almond flour
- 1 tbsp cinnamon
- 2 tsp baking powder
- 1/4 tsp nutmeg
- pinch sea salt
Directions
- Step 1 Use a medium to large bowl to beat the eggs. Now add in the remaining wet ingredients and mix thoroughly (melted coconut oil, apple cider vinegar, vanilla & maple syrup). Add in the coconut sugar and grated granny smith apple (or apple of choice) to the wet mixture.
- Step 2 Mix the dry ingredients together in a medium sized bowl (almond flour, baking powder, cinnamon, nutmeg & sea salt). Pack the almond flour like you would brown sugar when measuring. Mix the dry ingredients into the wet until just combined.
- Step 3 Grease a standard muffin tin with coconut oil and or line with muffin wrappers. Scoop 1/4 cup of batter into each muffin tin. Bake at 350 degrees for 25-28 minutes or until a toothpick inserted into the middle comes out clean. Makes 10-12 muffins. ENJOY!
