OK these are hands down my favourite no-bake snack, dessert, breakfast.. whatever you want to call them. My fiancé said they are “my best yet”. I’ll take it.
These Cookie Dough Protein Bars are SO easy to make with minimal ingredients & no baking required! You likely already have most of these ingredients in your pantry. They are gluten free, dairy free, vegan + paleo! Trust me, the whole family will love this recipe. Store these bars in the fridge for up to a week or the freezer for up to 4 weeks.
What you will need:
- cashews
- hemp hearts
- flax seeds
- maple syrup
- vanilla
- almond butter
- sea salt
- chocolate chips

Cookie Dough Protein Bars
Ingredients
- 1 1/2 cups raw cashews
- 1 cup hemp hearts
- 1/2 cup flag seeds (both whole or ground works)
- 1/2 cup maple syrup
- 1/2 cup smooth almond butter
- 1 tsp vanilla
- 1/4 tsp sea salt
- 1 cup chocolate chips
Directions
- Step 1 Add the cashews, hemp hearts and flax seeds to a food processor or blender. Pulse until a rough flour like consistency has formed.
- Step 2 In a mixing bowl add the maple syrup, almond butter, sea salt & vanilla together until it is smooth and creamy. Now add in the nut mixture to the wet ingredients. Mix this together really well. Now add in 1/3 of the chocolate chips and mix.
- Step 3 Line a 9×9 baking dish with parchment or grease it with coconut oil. Press the mixture very firmly into the dish with your hands. Place this in the freezer.
- Step 4 Melt the remaining chocolate chips (2/3 cup). Pour overtop of the mixture, using a spoon to evenly distribute the chocolate. Let this set in the fridge or freezer for at least 3-4 hours before cutting.
- Step 5 Once it has set, remove it from the baking dish and cut it into 12 bars. Keep the bars in the fridge for up to 1 week or in the freezer for up to 4 weeks (if they last that long).
