Paleo Vanilla Cupcakes with Coconut Cashew Frosting

Who doesn’t love cupcakes?! I have always had a soft spot for vanilla cupcakes with different flavours of frosting. These cupcakes are so fluffy and delicious, the coconut cashew frosting really is the cherry on the top.

This cupcake recipe really does have an endless amount of ways that you can get creative and make this cupcake your own! Whether you add a little cinnamon, cloves and nutmeg to the cake batter to give it a little spice or top the cupcake with fresh berries, jam, peanut butter, toasted coconut, chocolate ganache or sprinkles. You can add your own creative flare wherever you would like!

Paleo Vanilla Cupcakes with Coconut Cashew Frosting

Ingredients
  • CUPCAKES:
  • 4 eggs at room temperature
  • 1/3 cup of melted coconut oil
  • 1/4 cup coconut sugar
  • 1/3 cup maple syrup
  • 1 tsp vanilla
  • 1 tbsp lemon juice
  • 1/3 cup cassava flour
  • 2 cups packed almond flour
  • 2 tbsp tapioca flour
  • 1 tsp baking soda
  • COCONUT CASHEW FROSTING:
  • 1 1/4 cup cashews (soaked)
  • 1 cup almond milk
  • 1 tsp vanilla
  • 1/4 cup melted coconut oil
  • 1/3 cup melted coconut butter
  • 1/4 cup honey
  • 5 tbsp coconut flour
Directions
  • Step 1 In a stand mixer or large bowl, beat the eggs, then add in the melted coconut oil, coconut sugar, maple syrup, lemon juice and vanilla. Mix all the wet ingredients together until well combined.
  • Step 2 Fluff up the cassava flour with a fork prior to measuring it, then sift all of the dry ingredients together. Mix into the wet ingredients and combine until its creamy.
  • Step 3 Grease muffins tins with coconut oil and pop in liners if you would like. Fill the muffin tins 3/4 of the way full. Bake at 350 for 15-18 minutes. Yields about 12 cupcakes.
  • Step 4 While the cupcakes are baking, make the coconut cashew frosting. Make sure the cashews have soaked in room temp water for at least 30 minutes or hot water for at least 10 minutes.
  • Step 5 Add all the ingredients for the frosting into a food processor and pulse until the ingredients are smooth and creamy.
  • Step 6 Wait for the cupcakes to cool, then apply the cashew coconut frosting generously. Add any of your favourite toppings! Toasted coconut, raspberry jam, fresh berries, chocolate ganache, you name it.
