Banana Bread Cake Bars | Paleo

I would like to introduce you to these amazing banana bread cake bars that are only sweetened with bananas and a touch of date sugar! These bars are so fluffy, caramel-y and full of banana flavour! These can be eaten for breakfast, as a post-workout snack, an afternoon snack, or dessert. Lets be honest, you can eat these whenever your little heart desires because they really are that GOOD!

I have been eating a paleo diet for a couple years now. I am definitely not strict with it, I still eat my fair share of popcorn and grains from time to time. But I know that eating grain and dairy free most of the time really does make me feel better in so many ways. I sleep better, my digestion is so much better and I have less fatigue and cravings throughout the day. Once I started eating paleo I fell in love with paleo baking! There is so many ways to make your favourite dessert into something so delicious and nourishing for your body, made without refined sugars! Nobody would even know that it’s not the real deal.

Banana Bread Cake Bars (Paleo)

Ingredients
  • CAKE:
  • 3 large ripe bananas
  • 2 eggs
  • 1/3 cup almond butter
  • 1 tsp vanilla
  • 2 tbsp flax meal
  • 1 + 3/4 cup almond flour
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 2 tsp baking soda
  • 1/2 tsp baking powder
  • 1/4 tsp sea salt
  • TOPPINGS:
  • 3 tbsp coconut oil
  • 2 tsp cinnamon
  • 3 tbsp LIVA date sugar
  • 1/4 cup almond flour
  • 1-2 banans
  • 1/4 cup melted coconut butter
Directions
  • Step 1 Mash the banana in a large bowl until its softened. Add the eggs, almond butter and vanilla to the mashed bananas and mix until a creamy consistency is reached.
  • Step 2 Add in all the dry ingredients (no particular order is needed) to the wet mixture and combine.
  • Step 3 Grab a 11 x 7inch baking dish (or something equivalent) and line with parchment paper. Slice 1-2 bananas and place on the parchment paper. Mix together melted coconut oil, cinnamon, date sugar & almond flour for the topping. Evenly press this mixture into the bottom of the pan on top of the bananas. Now pour in your cake batter, over this mixture.
  • Step 4 Bake at 350 for 40-50 minutes or until a toothpick inserted in the cake comes out clean. Let the cake cool completely, then flip the cake upside down, peel off the parchment paper to expose the deliciousness.
  • Step 5 Drizzle the cake with 1/4 cup of melted coconut butter and serve!
