Cauliflower Pizza Crust with Creamy Cashew Garlic Sauce | Paleo

THE BEST cauliflower pizza crust around! Im seriously addicted to this pizza crust and can’t wait to make it again! Guilt-free pizza night? Who knew that could be a thing. This crust is the perfect amount of crispy and chewy, you would honestly never know that there is a whole head of cauliflower in it. Topped with a creamy cashew garlic sauce that makes you forget that there’s no added dairy. The perfect weekend or date night meal!

 

For this pizza I topped it with a creamy cashew garlic sauce, caramelized onions, red bell peppers, avocado and fresh greens. The options really are endless.. you can get creative and add your favourite toppings to suit your taste buds. This garlic cream sauce would also pair well with chicken and mushrooms, roasted vegetables and goat cheese, or sun-dried tomatoes, basil and prawns. You could also omit the garlic cream sauce completely and go a more traditional route. Im thinking a tomato sauce base, with fresh mozzarella + basil, pepperoni, green peppers and mushrooms or steak, olives and feta. You could also use this crust to make a flat bread for an appy night!

Ingredients
  • PIZZA CRUST:
  • 1 medium sized head of cauliflower (4-5 cups worth)
  • 1 egg
  • 1/3 cup + 2 tbsp cassava flour
  • 1/3 cup almond flour
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp sea salt
  • CASHEW GARLIC CREAM SAUCE:
  • 1/4 cup olive oil
  • 1/3 cup water
  • 1/2 cup raw cashews
  • 2 tbsp hemp hearts
  • 2 tbsp nutritional yeast
  • 1 tsp garlic powder
  • 1/4 tsp sea salt
Directions
  • Step 1 Start by cutting up the cauliflower into florets (should be about 4-5 cups worth of cauliflower). Steam the cauliflower on the stove top for approximately 8 minutes or until the cauliflower is completely cooked through.
  • Step 2 Once the cauliflower is cooked, transfer it into a food processor and pulse until it’s the consistency of rice. Use a cheese cloth or clean tea towel to squeeze as much liquid as you can from the cauliflower. This is important! You really do want to get out as much liquid as possible.
  • Step 3 Using a medium sized bowl, mix the cauliflower, egg, and olive oil together. Then add the remaining dry ingredients until a dough has formed.
  • Step 4 Use a baking pan or pizza pan lined with parchment paper. Press down the dough into your desired shape until it’s about 1/4 of an inch thick. Bake at 450 for 15 minutes.
  • Step 5 While the pizza is cooking, throw all the ingredients for the creamy cashew garlic sauce into the food processor and pulse until its nice and smooth.
  • Step 6 Remove the pizza from the oven once the edges begin to brown. Now add the garlic cream sauce to the pizza and top with your favourite ingredients. Place the pizza back into the oven for about 8 minutes on 450. Remove the pizza from the pan and place the it onto a wire rack to cool – this well help the pizza crisp up and keep it from getting soggy.
