Another spring detox recipe is here!!
This has been such a go-to meal in my house! It is super quick and easy to make, SO delicious and you can actually feel good about eating it! I made this recipe with carrot and zucchini noodles but it would also pair well with rice, quinoa, buckwheat noodles or rice noodles. This recipe is plant based, dairy free, gluten free and refined sugar free.
Heres what you will need:
- organic tofu
- natural peanut butter
- soy sauce or tamari
- fresh ginger
- fresh garlic
- maple syrup
- rice vinegar
- sesame oil
- sriracha
- water
- avocado or coconut oil
- chopped peanuts (opt.)
- sesame seeds (opt.)
- cilantro (opt.)
- green onions (opt.)
Ginger Peanut Tofu | Vegan
Ingredients
- 1 Package extra firm organic tofu (350g)
- 1/3 cup natural peanut butter
- 3 tbsp soy sauce or tamari
- 3 tbsp water
- 2 tbsp sesame oil
- 2 tbsp rice vinegar
- 1 tbsp avocado oil (for frying tofu)
- 1 tbsp maple syrup
- 3 tbsp fresh chopped ginger
- 3 cloves garlic
- 1/2 tbsp sriracha

- TOP WITH:
- 1/4 cup chopped peanuts
- fresh cilantro, sesame and or green onions
Directions
- Step 1 Start by making the ginger peanut sauce. To do so you will combine ALL of the ingredients except the tofu and avocado oil (in no particular order). Add the ingredients into a blender or food processor and pulse until the mixture is smooth and creamy. If you find the sauce to be too thick for your liking you can add an additional 1-2 tbsp of water to the sauce.
- Step 2 Chop the tofu into 1/2 inch cubes, then place into a frying pan heated on medium with 1 tbsp of avocado oil. Sauté the tofu for 2-3 minutes then add 1/2 of the peanut sauce to the frying pan until the tofu is completely coated.
- Step 3 Turn the heat down to med-low and sauté the ginger peanut tofu for approximately 6-8 minutes. Stir the mixture consistently to keep the sauce from sticking or burning.
- Step 4 Serve the tofu with rice, vegetable noodles, quinoa or rice noodles. Use the additional sauce left over the top your dish. Top with chopped peanuts, sesame seeds, cilantro and or green onions. ENJOY!
