Chocolate Almond & Fig Granola Bars | Paleo

These granola bars are gluten free, dairy free, grain free and paleo friendly. Made with ingredients that you can feel good about eating. You can keep these in the fridge or freezer for a quick breakfast, snack or after dinner treat. My favourite way to eat these granola bars is on top of a fruit and yogurt bowl or with a healthy slather of creamy peanut butter.

What you will need:

  • almond butter
  • coconut oil
  • vanilla
  • maple syrup
  • almond flour
  • cinnamon
  • sea salt
  • chocolate chips

Chocolate Almond & Fig Granola Bars

Ingredients
  • 2 eggs
  • 1/2 cup melted coconut oil
  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 1 tsp vanilla
  • 2 tbsp ground flax seeds
  • 2 cups almonds
  • 1 cups cashews
  • 1 cup pecans
  • 1 cup fried figs
  • 1/2 tbsp cinnamon
  • 1/2 cup almond flour
  • 1/4 tsp sea salt

  • TOPPING:
  • 1/2 cup chocolate chips
  • 1/2 tbsp coconut oil
Directions
  • Step 1 In a medium-large sized bowl, use a whisk to beat the eggs. Now add the remaining wet ingredients to the eggs and combine until it is smooth and creamy (melted coconut oil, almond butter, maple syrup and vanilla). Add the ground flax seeds to the wet ingredients and stir.
  • Step 2 Use a food processor to finely chop the almonds, cashews, pecans and dried figs. You can also do this by hand if you would like, just make sure that everything is finely chopped or the bars won’t stick together properly. Add the chopped nuts and figs to the wet ingredients and combine. Now add in the almond flour, sea salt and cinnamon.
  • Step 3 Use a baking dish lined with parchment paper (17inch x 11 inch) to press the mixture firmly into the pan. It is important that the bar is completely pressed into the pan so it bakes evenly and to prevent the bar from crumbling. Bake at 350 for 25-30 minutes.
  • Step 4 Remove the granola bars from the oven when the top begins to turn golden brown. Slice into bars once it has completely cooled. This makes 20-24 granola bars.
  • Step 5 Melt the chocolate chips and 1/2 tbsp of coconut oil together in the microwave until the chocolate is completely melted. Drizzle the chocolate onto the bars. Keep the bars the fridge for up to 7 days or in the freezer. ENJOY!
