Apple Spice Oatmeal Crumble | Vegan

If your looking for THE BEST holiday dessert (or breakfast), you have come to the right place. Seriously though, I could eat this apple crisp for breakfast lunch and dinner. It has a beautiful oatmeal crust on the bottom, the perfect amount of apple spice, caramelization and sweetness, and a crunchy oatmeal top. This recipe is made without gluten, dairy or refined sugars! The perfect clean eating, plant based dessert that your whole family will love!

What you will need:

  • gluten free oatmeal
  • coconut oil
  • maple syrup
  • sea salt
  • cinnamon
  • apple pie spice
  • 7-8 apples
  • lemon
  • coconut sugar
  • arrowroot starch/flour
  • water

The Oatmeal Crust:

For the oatmeal crust, you will place the oatmeal into the food processor and pulse until a flour-like consistency is formed. Now you can add the remaining ingredients for the crust. Use a 9×9 round pie dish greased with coconut oil. Firmly place 2/3 of the crust into the pie dish, allowing the edges to come up slightly. The other 1/3 of the crust will be set aside for the top of the crumble. Allow the crust to bake at 350 for 12-14 minutes (lightly golden) before pouring in the apple pie filling.

For the Apple Crumble Filling:

Start by peeling 7-8 medium/large sized apples. I used half Granny Smith and half Fuji. You can use whatever type of apple suites your fancy. Before you begin peeling and cutting the apples, ensure you have a bowl on hand with the juice of 1 lemon in it. Once you have peeled all the apples, remove the core and cut the apples into 1cm cubes, placing the apple cubes into the lemon juice directly after cutting (prevents the apples from turning brown). Ensure you are stirring the apples to make sure they are all coated in lemon juice. One you have completed this step, grab a medium-large sized sauce pan and turn it to medium heat. Place the apples into the sauce pan with the water, apple pie spice, cinnamon and coconut sugar. Once this comes to a light boil, turn the heat onto low. Use a small bowl to combine the arrowroot starch and water – ensure you have stirred out any clumps. Place this mixture into the apple filling to thicken, continually stirring with a spatula. Once the filling has thickened remove it from the heat and place into the pie dish. Place the remaining 1/3 of the oatmeal crumble onto the trop of the pie filling and bake.

  • OATMEAL CRUST:
  • 3 cups gluten free oats
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1 tsp cinnamon
  • pinch of sea salt

  • APPLE SPICE FILLING:
  • 7-8 medium to large sized apples
  • 1/2 cup water
  • 1/4 cup coconut sugar
  • juice of 1 lemon
  • 1/2 tbsp apple pie spice
  • 1/2 tbsp cinnamon
  • 2 tbsp arrowroot starch/flour with 2 tbsp water
Directions
  • Step 1 Pour 3 cups of oatmeal into a food processor and pulse until a flour-like consistency is formed. Now add in the remaining ingredients for the oatmeal crust until it is well combined. Grease a 9×9 pie dish with coconut oil and firmly press 2/3 of the oatmeal crust into the dish. Set aside 1/3 of the oatmeal crust for the top of the crumble. Bake the crust at 350 for 12-14 minutes or until the crust is lightly browned.
  • Step 2 While the crust is baking, begin peeling and coring the apples. Place the juice of 1 lemon into a large bowl. Chop the apples into 1cm cubes and place them into the bowl with lemon juice, tossing to ensure they don’t begin to brown.
  • Step 3 Once all the apples are chopped and tossed in lemon juice, grab a large sauce pan and place it on medium heat. Add the apples, water, apple pie spice, cinnamon and coconut sugar to the sauce pan, stirring with a spatula until it is combined. Once this mixture begins to simmer, turn it to low heat. In a small bowl mix the arrowroot starch and water together until there are no clumps. Pour the arrowroot mixture into the apple pie filling. Stir this mixture consistently. Once it begins to thicken, remove the filling from the heat.
  • Step 4 Pour the apple spice filling onto the baked oatmeal crust. If the apples are heaping in the dish, remember that they will bake down. Place the remaining 1/3 of the oatmeal crust on top of the apple filling in the pie dish. Lightly pack the oatmeal topping down with your fingers.
  • Step 5 Place this in the oven at 350 for 50-55 minutes. Let it cool, then serve as is or with your favourite coconut whipping cream or ice cream. ENJOY!
