And they are super easy to make!

As many of you know, power balls are one of my favourite things to make. One of the reasons is that they are super easy to make and don’t require any baking. I love having power balls on hand for when I feel like something sweet but don’t want to reach for something unhealthy. These bad boys are vegan, gluten, grain, dairy & refined sugar free! The perfect allergy friendly snack to have on hand. These keep well in the fridge for over a week, you can also pop them in the freezer to keep for longer. I hope you enjoy these as much as I do!!

Ingredients
  • Protein Balls:
  • 12 large soft medjool dates
  • 1/3 cup almond butter
  • 2 tbsp coconut oil
  • 1 1/2 cup cashews
  • 1/2 cup Garden of Life vegan protein powder (2 scoops)
  • 1 tsp vanilla
  • 1 1/2 tbsp cinnamon
  • DRIZZLE:
  • 1/3 cup coconut butter
Directions
  • Step 1 Using a food processor, mix the dates and almond butter together until well combined. Make sure to remove the pits and soak the dates in hot water first for 30 minutes if they are too hard.
  • Step 2 Add in the remaining ingredients to the food processor and pulse together until the cashews are finely chopped. Use a spatula to scrape down the sides of the container as necessary.
  • Step 3 Once a dough has formed, roll the mixture into 1 inch balls and place on a baking sheet lined with parchment. Melt the coconut butter and drizzle on each protein ball. Place them in the fridge or freezer for at least an hour to allow them to set. Enjoy!
