Tofu Peanut Noodle Stir Fry

This plant based meal is so flavourful, nourishing and easy to make! Loaded with fresh veggies, tofu, rice noodles and a delicious peanut sauce. You could easily swap out the tofu for another type of protein like chicken, prawns or beef OR change up the variety of vegetables!

Tofu Peanut Noodle Stir Fry

Ingredients
  • TOFU MARINADE:
  • 400g extra firm tofu (one package)
  • 1 1/2 tbsp tamari soy sauce
  • 1 tbsp sriracha sauce
  • -
  • PEANUT SAUCE:
  • 1/2 cup creamy peanut butter
  • 1 1/2 tbsp tamari soy sauce
  • 1 tbsp sriracha sauce
  • juice of 1 lime
  • 2/3 cup water
  • 1 inch cube ginger - minced
  • 1 tbsp maple syrup
  • 1 tsp garlic powder
  • 1 tsp rice vinegar
  • -
  • NOODLE STIR FRY:
  • 2 tbsp avocado oil
  • 5 cups broccoli florets
  • 1 red bell pepper chopped
  • 1 cup chopped carrots
  • 1 package rice noodles (400g)
Directions
  • Step 1 Start by marinading the tofu. Remove the tofu from the package, drain the liquid, then pat dry with paper towel. Chop the tofu into 1cm cubes. Use a medium sized bowl to toss the tofu cubes with tamari soy sauce and sriracha. Set the tofu aside to marinate.
  • Step 2 Chop the broccoli, carrots and bell pepper for the stir fry into bite sized pieces. Place a wok or large frying pan on medium heat. Once the pan is nice and hot, add the avocado oil then transfer the chopped vegetables to the frying pan and sauté for 10-15 minutes.
  • Step 3 While the vegetables are sautéing, make the peanut sauce and cook the rice noodles as per package directions. For the peanut sauce, you can mix by hand or place everything into a blender. If you are mixing the sauce by hand, ensure you have chopped the ginger finely to avoid large chunks. If you find the sauce too thick you can add another tablespoon or two of water.
  • Step 4 Once the vegetables have sautéed for 10-15 minutes, add in the tofu. Sauté the tofu with the vegetables for 3-4 minutes. Now add the cooked rice noodles and the peanut sauce to the frying pan (leave a quarter of the sauce for topping your bowl). Toss the noodles, tofu and veggies together until they are completely coated in sauce.
  • Step 5 Top the stir fry with green onions, fresh lime, cilantro or sesame seeds! ENJOY!
