Paleo Cassava Flour Bread

I would like to introduce you to the best paleo bread there is! Crispy on the outside and fluffy on the inside. Generously slather on some almond butter, smashed avocado or your favourite jam. This paleo bread is gluten, grain, sugar and dairy free and is the perfect allergy friendly bread that still tastes amazing and has a similar texture to regular old gluten bread. My favourite way to eat this bread is to toast up a couple slices and add some avocado and soft scrambled eggs. Its honestly making my mouth water just thinking about it…

You definitely do not need to be paleo in order to enjoy this bread. My boyfriend, who is a regular gluten consumer, will reach for a piece of this bread over regular wheat bread when I have it in the house. You might not have a specific sensitivity/intolerance  to gluten, however, it can be very inflammatory for a lot of people. You may never realize the effects that gluten has on you until you completely cut it out for a couple weeks and monitor how you feel. Most people will notice a significant difference in their digestion, mental clarity and energy levels after cutting it out of their diet. So after all they may have been sensitive to gluten but never been aware of it. It’s definitely worth giving it a try if it can increase mental clarity, reduces fatigue + inflammation and improves digestion!

Paleo Cassava Flour Bread

Ingredients
  • 4 eggs
  • 1/4 cup of high quality olive oil
  • 1 tbsp apple cider vinegar
  • 1 tbsp raw honey
  • 1/4 cup hot water
  • 1/4 cup golden flax meal
  • 1 1/4 cup cassava flour (I use Ottos)
  • 1/4 cup arrowroot flour ( I use Bobs Red Mill)
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp sea salt
Directions
  • Step 1 Preheat the oven to 350 degrees. Beat the eggs, then stir in the honey, apple cider vinegar and olive oil until well combined.
  • Step 2 Add the flax meal and hot water to the mixture, give it a good stir and let it sit for a couple minutes.
  • Step 3 Sift in the remaining ingredients (cassava flour, arrowroot flour, baking soda, baking powder and sea salt).
  • Step 4 Grease a loaf pan with coconut oil or use a sheet of parchment paper. Bake at 350 for 45-55 minutes.
