Chocolate Peanut Butter Oat Bars | No-Bake | Vegan

So I am pretty obsessed with these bars. They are so easy to make, no baking required and are SO DARN DELICIOUS!! The bottom oat layer is chewy & peanut butter-y with the perfect amount of sweetness. The middle chocolate layer is smooth, creamy & chocolatey, made with a mix of coconut butter and PB. Absolutely no-refined sugars, gluten or dairy in this recipe! The ultimate “I’m on lockdown and want something SO satisfying without being unhealthy for me” kind of treat! Comment below, let me know what you think 🙂

Ingredients
  • OATMEAL LAYER:
  • 1 cup natural peanut butter
  • 1/3 cup maple syrup
  • 1/4 cup melted coconut oil
  • 1 tsp vanilla
  • 2 cups quick oats
  • 1 cup shredded unsweetened coconut
  • 1/8 tsp sea salt
  • CHOCOLATE LAYER:
  • 1/3 cup coconut butter
  • 1/3 cup natural peanut butter
  • 2 tbsp maple syrup
  • 1/4 cup coconut sugar
  • 3 tbsp cacao powder
Directions
  • Step 1 In a large bowl mix together the peanut butter, melted coconut oil, maple syrup, vanilla and sea salt for the bottom layer until it is well combined. Add in the oatmeal and coconut to this mixture and stir until the ingredients are well coated.
  • Step 2 Using a 9×9 baking dish lined with parchment paper, press in the pb oatmeal mixture evenly and firmly into the pan. Set aside 1 cup of the oats for the top layer!!
  • Step 3 In a medium sized pot, melt the peanut butter and coconut butter together on medium heat. Stir it consistently, making sure the bottom doesn’t burn. Once these have melted together, add in the remaining ingredients. Stir the mixture until the coconut sugar has dissolved.
  • Step 4 Spread the chocolate mixture evenly over the oatmeal layer. Add the remaining 1 cup of the oatmeal mixture to the top of the chocolate layer. Place in the freezer for at least 1 hour or in the fridge for at least 2 hours to allow it to set. ENJOY!
