Cinnamon & Coconut Granola | Paleo | Vegan

This recipe is for all those granola lovers out there! This granola is cinnamon-y, crunchy and a touch sweet. You can pair it with yogurt, fruit, pancakes, ice cream, smoothie bowls, chia pudding… you name it! My favourite way to eat this granola is to generously top it on some coconut yogurt with fresh fruit and nut butter. I store this granola in an air-tight glass container so it stays nice and fresh for months. If you’re not a huge fan of coconut you could easily swap out the shredded coconut for more nuts and a little more hemp + flax. Butttt.. lets be honest, if you don’t like coconut, the whole friends thing might not work out.

Im not sure about anyone else, but every time I eat oats I typically feel a bit lethargic and heavy after. They have never really sat well with me, which is one of the reasons I decided to go mostly paleo. I seem to be able to eat a bar with oats in it and feel okay, but a big ol bowl of oatmeal straight up is a little too much for me. I have always loved granola with lots of cinnamon and coconut in it, so I decided to make my own recipe that I can enjoy oat-free!

Cinnamon & Coconut Paleo/Vegan Granola

  • Step 1 Chop up the nuts to your desired size, using a food processor or chopping by hand. Place the chopped nuts, shredded coconut, ground flax, cinnamon and hemp hearts into a large bowl and give it a stir.
  • Step 2 Melt the coconut oil in the microwave until liquid. Add in the maple syrup and vanilla to the coconut oil and give it a stir. Pour this mixture over the dry granola and stir until everything is well coated.
  • Step 3 Pre-heat the oven to 350 degrees. Place the granola onto a large baking sheet lined with parchment paper. Bake for 10 minutes, then stir. You want to prevent the nuts/coconut from burning.
  • Step 4 Now stir the granola every 5-6 minutes for approximately 20 minutes or until the granola is turning a nice golden brown colour.
  • Step 5 Once the granola is golden brown, take it out of the oven and allow it to cool completely before storing in an air-tight container.
