Creamy Bacon & Cauliflower Soup | Paleo | Dairy-free

This is for all my soup lovers out there! If I could choose one meal to eat for the rest of my life, it would without a doubt be soup. I find it so satisfying, flavourful and nourishing. Such an amazing way to get in lots of fibre, vegetables, healthy fats and protein all into one steaming hot bowl. OH and I also have a weird thing for bowls and spoons. I eat most things out of a bowl if I can… is this normal? Anyways, this soup is super creamy and so full of bacon-y flavour! This pairs so well with a fresh green salad, sandwich or fresh baked bread.

I really do mean it when I say that IF I had to choose something to eat for the rest of my life, it would be soup. Hands down, no second guessing, that’s just what it would be. Im curious to know what you would eat for the rest of your life if you HAD to choose? Comment below and let me know!

Creamy Bacon & Cauliflower Soup (Paleo | Dairy-free)

Ingredients
  • 10-12 cups cauliflower florets
  • 1 white onion
  • 6 pieces of bacon (organic & nitrate free)
  • 6-8 cloves of garlic
  • 2 tbsp avocado oil
  • 6 cups unsalted organic chicken broth
  • 1 can of coconut cream
  • 1 tsp sea salt
  • 1/2 tbsp chicken bouillon
Directions
  • Step 1 Cook the bacon in the oven at 375 for about 20 minutes or until crispy, and set aside.
  • Step 2 Dice up the onion & garlic, sauté in a large pot for 1-2 minutes with 2 tbsp of avocado oil. Now add in the cauliflower florets to the garlic and onion and sauté for 8-10 minutes.
  • Step 3 Add the remaining ingredients to the pot and simmer on med/low for about 10 minutes (or until you have reached the desired tenderness for the cauliflower).
  • Step 4 Using a strainer, remove half of the cooked cauliflower florets and set aside. Using a hand blender, pulse the soup until it is smooth and creamy.
  • Step 5 Now add in the cauliflower that was set aside and chop up the bacon into small pieces and add it to the soup. Top your bowl with fresh chopped parsley, crack of pepper and a drizzle of olive oil.
